Elderberry – Recipes

Elderberry, also known as elder in our region, exudes the scent of summer with its fragrant blossoms. With our recipes, you can conjure up sweet and fruity elderberry syrup, which is particularly effective in drinks and desserts, and baked elderflowers, a popular dessert.

Where can you find elderflowers?

Elderberry bushes are widespread in our region and easy to find. On hikes and walks in the valleys, you will find elderberry bushes along the way and they are easy to pick.

Tip: Always pick elderflowers when the sun is shining to enjoy the full aroma.

Elderberry syrup – Recipe

Ingredients for a few bottles of elderberry syrup:

5PieceLemons
3kgSugar
40PieceElderflowers
45gCitric acid

Clean the elderflowers (do not wash, otherwise the aroma will be lost), slice the lemons and mix everything with the remaining ingredients in a large bowl.

Cover the bowl with a cloth and leave to infuse for approx. 48 hours. Keep stirring so that the sugar dissolves and the elderberry syrup does not start to ferment. After these two days, strain the juice and bring to the boil once (pasteurize).

Now you can fill the fresh elderberry syrup into clean bottles and store them tightly closed. The diluted juice can now be consumed immediately.

Baked elderflowers – recipe

Gebackene Holunderblüten

Ingredients :

60gButter
200gFlour
200mlMineral water (sparkling water)
2PieceEggs
1PackVanilla sugar
1ELSugar
1ELSalt
15PieceElderflowers
3ELPowdered sugar
200mlOil for packing

Melt the butter in the microwave, add salt to the flour and mix with the mineral water until smooth. Separate the eggs, then stir into the batter alternately with the butter. Beat the egg whites until stiff, mixing in the vanilla sugar and sugar. Fold into the batter with a whisk.

Clean the elderflowers, but do not wash them (otherwise the aroma will be lost).

Grab the elderflowers by the stem, pull them through the batter and place them in the hot oil with the stem facing upwards. Finish frying until the batter is nicely browned. Drain on a plate with kitchen roll.

Finish the Hollertatschei with powdered sugar – done!
